Iron Will Family Favourites Cookbook On Sale Now

A lot of love has been poured into the new Iron Will Family Favourites Cookbook that went on sale earlier this month.

The cookbook was created in honour of Saskatchewan boy Will Rattray who died of heart failure at just 13 months old. Will, who was diagnosed with an underdeveloped larynx, spent nearly a third of his life in hospital before tragically passing away in 2013. His ability to smile no matter how challenging things got earned him the nickname “Iron Will.” In spite of his short life, this little fighter has made a remarkable impact on Saskatchewan.

Rattray Family (Small)

The Rattray family, along with friends have raised an incredible $150,000 for the Children’s Hospital Foundation of Saskatchewan in honor of Will. The Rattrays worked with Saskatchewan company 22Fresh to create a t-shirt in Iron Will’s memory. The t-shirts were a sell-out. The Rattray family also hosts an annual superhero-themed Family Day in Regina every November.

With 100% of the proceeds being directed to the Children’s Hospital Foundation of Saskatchewan, the Iron Will Family Favourites Cookbook is their latest and most delicious effort yet.

“Our hope is that this cookbook provides your family with joy, through a shared meal or a decadent treat. Food has always brought families together and we know that there is nothing more important,” say Will’s parents Desiree and Jason Rattray.

Here is a preview recipe from Iron Will Family Favourites Cookbook:

PUMPKIN WHITE CHOCOLATE CHIP MUFFINS
Colin and Jennifer Tanner’s Family Favourite

1/2 cup walnuts, chopped 1/4 tsp. baking powder
1 2/3 cup all-purpose flour 1/4 tsp. salt
1 cup granulated sugar 2 eggs
1 tsp. cinnamon 1 cup pumpkin
1/2 tsp ginger 1 tsp. vanilla bean paste
1/2 tsp. ground cloves 4 oz. unsalted butter, melted
1 tsp. ground nutmeg 6 oz. white chocolate chips
1 tsp. baking soda

Preheat oven to 350F. In large bowl mix the flour, sugar, spices, baking soda, baking powder and salt. In another bowl, mix together the eggs, vanilla bean paste, pumpkin and unsalted butter. Add in the chocolate chips and nuts.

Combine the wet and dry ingredients and mix until the dry ingredients are moistened. Do not over mix. Scoop batter into a greased or paper lined muffin tins. Bake for about 20-22 minutes or until puffed and springy to touch. Cook then remove muffin tin. Makes 12 muffins.
